Within the ‘belly’ of Genesis lies the contents of an entire wine cellar. “It can hold up to 200 kilos of grapes and produce 100 liters of wine, ready to be perfected”, says Dora Marchi, biologist and enologist at Enosis, a sixteenth century farmhouse mansion set among vineyards where 37 Italian native grape varieties are cultivated: a true “Wonder”.
